herb topped steak2 There’s nothing more satisfying than a juicy piece of steak when you’re really hungry. Most people enjoy steak topped with butter, blue cheese, or vegetables, but for the longest time I’ve been a Plain Jane when it comes to my food. I’ve always said no sauces, no toppings, and please don’t make me try something new. This all changed when I started eating healthy. My palate made a 180. Now I’m willing to throw together many different flavors to make a beautiful dish like this Herb Topped Steak.

Baked Egg in Avocado

Looking for more breakfast ideas? Here’s one you may not have thought of, yet. I call it- Baked Egg in Avocado. 

A perfect healthy breakfast, Baked Egg in Avocado

Everyone always tells me breakfast can get boring, but I disagree. Breakfast is my favorite meal of the day. Some people eat breakfast around lunch time, especially with the intermittent fasting hype. But let’s be honest, you can eat breakfast food at any time of day! I recently got on an avocado kick, and decided to try this idea out. It’s so simple and such a great combination of textures. 

If you’re like some of my family members (cough, cough my sister), you don’t like using a huge knife. You can use on of these Avocado Slicers from Amazon, they are like $8! Totally worth it. 

Here’s what the slicer looks like. 

What benefits are you getting from this meal? Healthy fats and satiation. When you eat this versus cereal, you get full! Cereal or other breakfast favorites leave you feeling hungry in a couple of hours. When you eat the right fats, you get full (and no you don’t get fat). This Baked Egg in an Avocado will keep you running all day long. 

And here’s a plus! All my readers who have tried it, loved it, and have made it a staple in their breakfast regime.

Ingredients
  1. Avocado
  2. 2 Eggs
  3. Sea salt and pepper
  4. Other spices, optional
Instructions
  1. Cut avocado in half, remove pit. If necessary scoop out some avocado to make room for egg.
  2. Crack eggs into a bowl. Place yolk and some egg white (with a spoon) into the avocado's hole.
  3. Bake in oven on 425 for 13-15 minutes.

Garlic Green Beans

Are you looking for ways to add more greens into your diet? When you cook delicious recipes, it's easy to eat vegetables. These green beans are some of my favorite.

Mmm… Green beans are some of my favorite vegetables. I personally love to pair them with a steak. Although green beans are technically legumes, I still include them occasionally in my diet because of their good nutritional profile. 

My roommate, McCayn, and I cooked a LOT this year. Starting college made us decide if we wanted to eat healthy and save money, or eat crap, get fat, and waste money. It was an obvious decision for us. At first McCayn thought she was terrible at cooking anything. Because of our desire for variety, McCayn brought some great ideas to our menus (yes menus, we create them on Sundays). One of the first things she cooked for me was green beans, and they were actually really good. She makes them similar to this recipe but tops them with toasted almonds. 

Cooking Tip: Add the toasted almonds to the top of these for some extra crunch. Just take sliced almonds on a cookie sheet, and place them in the oven for a few minutes on broil.

Ingredients
  1. 2lb Fresh green beans
  2. 2-4 Tablespoons pasture butter
  3. 4 Cloves of garlic, minced
  4. Sliced almonds (optional)
  5. Salt and lemon pepper, to taste
Instructions
  1. Wash beans thoroughly and snap ends off.
  2. Place green beans in 1/2"-1" of water and bring to a boil (covered with top) for 3 minutes.
  3. Drain green beans in colander.
  4. Place butter in skillet and bring to low heat.
  5. Sautee garlic in butter.
  6. Add green beans and toss for 2-3 minutes.
