Herb Topped Steak

herb topped steak2 There’s nothing more satisfying than a juicy piece of steak when you’re really hungry. Most people enjoy steak topped with butter, blue cheese, or vegetables, but for the longest time I’ve been a Plain Jane when it comes to my food. I’ve always said no sauces, no toppings, and please don’t make me try something new. This all changed when I started eating healthy. My palate made a 180. Now I’m willing to throw together many different flavors to make a beautiful dish like this Herb Topped Steak.

When you still eat a Standard American Diet (SAD, and yes it’s very sad), you don’t get much variety. Most processed foods are made with corn, wheat, and soy and there’s not much flavor there. Not too mention, those three big offenders are now almost always genetically modified, and GMOs scareeee me. When food has no flavor, they add things like sugar and salt and chemicals to make it taste good. After I left the SAD way of eating, I found flavor and lots of it. Fresh herbs are a wonderful way to make a simple dish turn into a masterpiece.

My Plain Jane phase still existed for months into eating a Paleo diet. I found flavor with fresh fruits, veggies and quality meats but it wasn’t until recently that I realized my usual New York Strip could taste even more amazing. If you really want to impress someone with a dish, make this Herb Topped Steak. It’s a very attractive meal and will surely satisfy any appetite.

Herb Topped Steak

Yields topping for 3-4 steaks

Ingredients
  1. 1 New York Strip Steak, or your favorite cut
  2. 1 Tablespoon of ghee or coconut oil
Herb Topping
  1. 6 garlic cloves, peeled
  2. 1/3 bunch of fresh parsley
  3. 1/4 cup olive oil
  4. 2 tablespoons balsamic vinegar
Instructions
  1. Preheat oven to 400 F.
  2. Heat oil or ghee on high heat in a cast iron skillet. Sear steak for 1 minute on each side.
  3. Place skillet and steak in oven for 6-8 minutes- will result in a medium rare steak.
  4. While steak is cooking, make topping.
Topping
  1. Place all ingredients in a food processor, making sure to not over pulse. Garlic should look chopped. Top a tablespoon on each steak.
