Looking for more breakfast ideas? Here’s one you may not have thought of, yet. I call it- Baked Egg in Avocado.
Everyone always tells me breakfast can get boring, but I disagree. Breakfast is my favorite meal of the day. Some people eat breakfast around lunch time, especially with the intermittent fasting hype. But let’s be honest, you can eat breakfast food at any time of day! I recently got on an avocado kick, and decided to try this idea out. It’s so simple and such a great combination of textures.
If you’re like some of my family members (cough, cough my sister), you don’t like using a huge knife. You can use on of these Avocado Slicers from Amazon, they are like $8! Totally worth it.
Here’s what the slicer looks like.
What benefits are you getting from this meal? Healthy fats and satiation. When you eat this versus cereal, you get full! Cereal or other breakfast favorites leave you feeling hungry in a couple of hours. When you eat the right fats, you get full (and no you don’t get fat). This Baked Egg in an Avocado will keep you running all day long.
And here’s a plus! All my readers who have tried it, loved it, and have made it a staple in their breakfast regime.


- Avocado
- 2 Eggs
- Sea salt and pepper
- Other spices, optional
- Cut avocado in half, remove pit. If necessary scoop out some avocado to make room for egg.
- Crack eggs into a bowl. Place yolk and some egg white (with a spoon) into the avocado's hole.
- Bake in oven on 425 for 13-15 minutes.

I was so excited to try this recipe after seeing so many photos of eggs in avocados floating on the internet.
My avocado tasted fine prior to baking. But yes, it did indeed get quite bitter after baking. Never bake an avocado. Easier to just poach and egg and slice the uncooked avocado onto it.

Sounds reasonable as well! I think it tastes fine, but that makes sense.

Negative. Baking (grilling, frying, etc.) Avocados do NOT make them bitter – over-cooking them creates for the bitter taste. Think about the ripeness of the Avocado prior to cooking; if very ripe the potential to over-cook can happen more quickly than one that has only recently ripened.

My avocados kept falling over and my egg kept spilling out. I finally got them to stay up. I even leaned them up against the edges of the dish. They are in the oven as I type. 🙂 So excited to try them!

If you gently press down on the avocado sides before addingthe egg, the sides will flatten just enough to not tip over. 🙂

I personally don’t care for cooked avocado, so, I poached the egg and placed it in the avocado half; it’s amazingly good. I am not discrediting the egg baked within method, I just wanted to make note of how else to achieve this.
