5 Easy Paleo Recipes from 2013

It’s Sharing Saturday! Except instead of sharing others recipes today, I’m going to share my own favorites from 2013. I always get the question, what are your favorites? The Recipe Index can be overwhelming. So,  here are 5 easy Paleo recipes that I use almost weekly when making a grocery list. If you need a grocery list printable, go here.

Spinach and Ham Scramble

When you decide to break your fast (breakfast), eggs are always a good option. These can be made in the dorm room too! 

Mini Meatballs

Meatballs are the perfect make ahead recipe. You need to be smart about food prep, especially during busy weeks. Meatballs are a staple because you can freeze them (cooked) and defrost during a busy week. I try to keep frozen meatballs in packs of 4-5 for emergencies. There are days when I know I cannot cook, and so I just take them out in the morning. 

Roasted Asparagus Salad

I love making my asparagus like this. It brings a whole new meaning to asparagus. My roommate sometimes surprises me with this dish, because we both love it! The sliced almonds give a perfect crunch texture to the dish. Don’t forget some lemon juice on top. 

Chicken Nuggets

These chicken nuggets are just so delicious! It was such a nice surprise when I realized I could still eat chicken nuggets. I love them cold for lunch too.

Cauli-Mash

If only I could describe my love for Cauli-Mash. It’s a great basic recipe that tastes a lot like mashed potatoes. We bring these to family functions instead of potatoes, and people love it!

    – The Paleo Diet only allows plants edible uncooked plants.
    These are easy paleo recipes that I absolutely love and can make up a great dessert or just when you need some snack.

    Cauliflower mash is one of my favorite things I discovered since going paleo 6 months ago. Those chicken nuggets look great, I usually stick to my fave paleo cook book http://mirandasjeans.com/my-favorite-paleo-cookbook but I’m going to add those to the menu this week too! Thanks 🙂
