I have a confession to make… I LOVE bacon. People get surprised when they see I eat it. All my friends know I’m all about health, but I eat bacon, a food that for years has been known as “fattening” and “artery-clogging”. Newsflash! Fat does NOT make you fat and good fats are good for your heart.
But what about saturated fat? And nitrates?
Well come to find out, saturated fat has nothing to do with heart disease. Don’t believe me? Ask Dr. Loren Cordain. In his book The Paleo Answer, he states, “The saturated fats you consume from grass-fed beef, poultry, pork, eggs, fish, and seafood will not promote heart disease, cancer, or any chronic health problem. In fact these foods can ensure your birthright- a long, healthy, happy life.” And nitrates are not really a problem, according to Chris Kresser.
If I can eat bacon, sign me up! Where should I buy it?
Look for pastured pork. The best part about pork is that when it is pastured the flavor isn’t compromised. Pastured means it has been raised outdoors, not in a feedlot. The primal way would be to hunt it yourself, but there are other options. One of my favorite online place to buy quality meat is Topline Foods. If you’d rather buy locally try to find a farmer’s market and ask if their pork is pastured.
