As a kid, I may have been the pickiest eater that you have ever met. But one thing I loved was breakfast food. Not really the healthy stuff, I liked waffles, pancakes, Pop-Tarts, and OATMEAL. Brown Sugar Cinnamon Oatmeal was my thing. But today, I don’t eat much of any of those breakfast foods. Unfortunately they leave me hungry a few hours later, so I try now to start off with something more filling. This Whole30 Breakfast Bowl has an oatmeal-like texture, then I top it with almond butter, coconut, and apples. Oh and cinnamon. Lots and lots of cinnamon.
If you’ve never heard of a Whole30, you should. It’s an amazing program made by Melissa and Dallas Hartwig. It’s one of those plans that if you’re friend is on it, you may hate him/her because you can’t have any alcohol, eat out much at all (without knowing how to order), and it requires some work. But the truth is the program WORKS, and it’s something I recommend everyone does once in their lifetime. Heck, maybe even once a year. I’ve completed 2, but I’m looking for a good time to start another one.
Many of you have asked about the Whole30 approved vanilla. You can use Vanilla Bean Powder to replace vanilla extract. It’s a 1:1 conversion! Here’s the vanilla bean powder for those asking!
From my experience, it’s just a very strict version of Paleo. Because the rules are very strict, it makes you start reading every label, and truly understand the food you are putting in your body. The results are real, and you may find some foods you were eating, that seem somewhat healthy, are causing more problems than you thought. It’s an eye-opening experience!
Since this breakfast does not have vegetables (and Whole30 requires veggies at each meal), I usually add a serving or two more at lunch and dinner!


- 1 ripe medium banana
- 2 eggs
- 1 teaspoon vanilla bean powder
- 1/4 green apple, sliced
- 1-2 Tablespoons almond butter
- 1-2 Tablespoons dried coconut flakes
- 1 Teaspoon cinnamon
- Coconut oil, for cooking
- Using a fork, mash the ripe banana and mix it with the eggs and vanilla in a small bowl. The batter will be lumpy.
- Grease a skillet with coconut oil and turn stove to medium heat. Add the lumpy batter and with a spatula, continue to mash and stir the mixture.
- Once cooked, remove from skillet and place into a bowl. Top with apple, almond butter, coconut flakes, and cinnamon
- Vanilla bean powder may be hard to find. If you don't find it, don't worry! The meal will still taste delicious!
- Since this breakfast does not have vegetables (and Whole30 requires veggies at each meal), I usually add a serving or two more at lunch and dinner!

What kind of vanilla do you use? I know that vanilla extract is non-compliant.

This sounds awesome and we’ll definitely give it a try! One thing to watch out for though if you’re doing a strict Whole30: vanilla extract is not Whole30 compliant (contains alcohol or sugar alcohols). They suggest using vanilla bean powder.

this looks good but I read in the Whole 30 book that you can’t use vanilla. Is this recipe for vanilla extract or actual vanilla scraped from the bean?

Can you recommend a vanilla brand to use? I’ve looked at a few and they have sugar and booze in them. Trying to stick to the rules of this at least for 30 days!

In my experience, vanilla bean powder is mostly artificial sugar. I thought I had struck gold with it on my second whole30, but it was too good to be true. If you have found one that is not, I’d love to know the brand!

This looks delicious, and is technically compliant, but it really doesn’t fit the Whole30 meal template (http://whole30.com/downloads/whole30-meal-planning.pdf) at all. There are no vegetables, one egg is not enough protein, and I would be concerned that for those who who are trying to overcome a sugar habit, this would be ‘feeding the sugar dragon.’ Great paleo/GF option, but Probably best to wait until post-Whole30.
Johanna. Great to point out and I will add that to the post. Maybe upping the egg and serving with a side of veggies would be a good way to incorporate this into your meal. When I Whole30 I usually don’t eat veggies for breakfast, and end up adding a few servings more to lunch or dinner. But I will definitely share that in the post!
This is awesome! I really didn’t think it would be so good. Has anyone ever tried making a big batch and reheating it throughout the week? I want to eat it every day.
Hey Jenna! I’m glad you like it. I actually haven’t made it in a batch yet, but just give it a try and see if it still tastes good. I personally think it’s probably better fresh, but you can always try!
So I was a little hesitant to make this, but OMG it was so good! I modified mine a little, I used what I had on hand. 1 banana, 1 egg and peanut butter, shredded coconut and strawberries and now this will definitely be on my breakfast menu!

I have done whole 30 a couple of times now and tend to get bored with eggs every morning. This looks like a nice variation and I plan to give it a try as I eat Paleo most of the time. Thanks for sharing such a wholesome recipe!

I, like a lot of others, avoided the mashed banana/egg combo for a while because it sounded weird to me but this is SO good! I finished my Whole 30 months ago but I try to keep on track. This has definitely gotten me out of my breakfast rut! I’ve eaten the same scrambled eggs and sweet potatoes every morning for months. Thanks so much for the recipe!

I really don’t like eggs, so the first two weeks of Whole30 and the endless scrambled eggs, hardboiled eggs, and omelets was killing me. I eventually found some amazing frittata and casserole recipes that had eggs, but didn’t taste like eggs, so I managed to make it to almost the end of the Whole30 program. I only wish I had found this recipe four weeks ago! This was amazing. My husband loved it so much, I had to go buy more bananas to make this again the next day. We’re at the end of our Whole30 journey and are halfway through reintroduction, but I have no doubt this will become a regular breakfast even after Whole30 is done! Thank you so much!

I wasn’t sure I would be able to eat this…. banana cooked with eggs….? I like and eat everything but separately. It takes a lot of creativity to come up with a recipe like this. It tastes sooo good and filling and I have no problem eating steamed kale on the side for breakfast. I didn’t have vanilla bean powder but I did have vanilla beans. I took half of a long bean and scraped out the seeds instead of using the powder (which I didn’t have) . I probably used a quarter to a third of a teaspoon. The seeds clump. I had to use my fingers to rub the clumps to distribute the seeds more evenly. The flavor was good. Thanks for the recipe. This is a keeper.

This is so delicious! Thanks so much for this recipe – it’s a real program saver for me. I know it isn’t recommended for Whole30, but I may have broken my plan if not for this delicious breakfast! It’s been tough for me as I’ve been mostly vegetarian for 12 years and have never been one for eggs either. I will keep this in the breakfast line up for years to come, as my little ones like it too.
