A Paleo Concession Stand : Bravo For Vive!

One day in Fall 2014, I sat at my kitchen counter eating lunch, a Paleo Chicken Salad Wrap and some veggies. I thought these would be just perfect at a football game. As a student at LSU, when I think of fall semester I think football season. 100,000 people come to the campus on Game Day, I knew I couldn’t be the only one who wants to eat healthy. So I thought, how about a Paleo Concession Stand ?

After a few rejections and laughs at my idea, I only became more determined to make it happen. In order to make the amount of wraps we would need for a game, I needed a pro. I went to a good friend of mine, Chef Vasquez, who makes Paleo-friendly food at both of his restaurants, Vive Foods and Opal Basil. His wife is an LSU alum, so she understood how important Game Day is to the fans and students. Once they decided to work with me, we created a menu we found fitting for the setting. They have similar beliefs on food as I do, and their restaurant emphasizes supporting local farmers. We couldn’t have been a more perfect pair. 

Bravo For Vive’s goal is to bring a healthy alternative to game day. We want people to be able to eat something tasty and satisfying, made with real ingredients! Our menu is so delicious, you won’t even notice it’s healthy. Not kidding, my best friend loves fast food and is so picky, she tried it and said “If this is how Paleo tastes, I want to go Paleo!” So Tiger Fans, now you can Geaux Paleo on campus! 

BBQ Pork Lettuce Wrap

These are our BBQ pork lettuce wraps! If you know my eating habits, you know I don’t eat too much pork, but since this is locally sourced meat. It’s unbelievably good! 

Chicken Salad Wraps with Aioli

These are our Chicken and Vegetable Coconut Wraps! They were a must on the menu, because they inspired this whole process! The wraps are actually made of coconut, so they are completely gluten and grain free! 

Kale Chips with Honey and Aioli

No more nachos, because we have Kale Chips with Aioli! They are crunchy, and topped with some local honey for extra goodness. If you are a vegetarian, this may be the option for you. 

LSU fans, find us outside the Stadium by the Airplane and inside the Stadium in the student Section. If you are not from Louisiana, don’t worry we could be coming to a Stadium near you soon!
