Some recipes are just too good not to share. These Paleo Chicken Salad Wraps are one of those recipes. It’d just be wrong for me to keep this recipe to myself.
As some of you know, I worked for Laura Fuentes at MOMables last summer. I like to say she gave me the “Blogging for Dummies” course. She had it down, but she needed an intern and I wanted to learn. It was such a fun experience, and now whenever I’m in town I must visit for Bulletproof Coffee or a Paleo treat together. We both love healthy food, blogging, and coffee. A lot.
This recipe idea came from her, she has a staple chicken salad recipe that she makes weekly, and we get really creative with 100 million ways we can eat it. After finding these completely Paleo wraps, we decided to stuff them with her chicken salad. It was deeelicious. I love all different kinds of chicken salad. I actually have another Chicken Salad Recipe on my blog, which is a bit more complicated. This one that I’ll share today is much easier and perfect to make each week.
This recipe actually inspired my big project, Bravo For Vive, a line of Paleo foods for concessions. I thought these wraps would be awesome for tailgating and stadium food, and I wanted to be able to help those who want to eat healthy but have no option to in these situations! This season we will be at LSU, and we could be coming to a stadium near you soon! You can see my cute promo video about our concession line on Youtube.
So about the recipe… You have to buy the Paleo wraps online on Amazon. I’m not always a huge fan of buying Paleo products, but 1) these are only made of coconut, so they’re super healthy and 2) these are SO good and will give you so many new options for lunch. After you buy the wraps, make the chicken salad and use a Paleo mayo recipe. Do not get lazy about the Paleo mayo and buy store-bought; the Paleo mayo is much better. Mayo can be tough if you don’t follow directions. Happy lunch-making! Share with me in the comments your opinion on this recipe.


- 1 whole roasted chicken or 2 pounds of chicken
- ½ cup finely chopped celery
- Juice from 1 lemon (about 2-3 Tablespoons)
- ⅓ - ½ cup Paleo mayonnaise (see recipe below)
- ¼ teaspoon salt
- ½ teaspoon pepper
- 1 teaspoon Creole Seasoning
- 1 large egg, at room temperature (very important to be at room temperature)
- 2 teaspoons lemon juice, at room temperature
- 1 cup light olive oil (or ½ cup olive oil + ½ cup avocado oil)
- ½ teaspoon salt
- ½ teaspoon dijon mustard, optional
- 1 Paleo Wrap
- ½ cup chicken salad
- Extra mayo (optional)
- Put cooked chicken in a food processor and pulse a few times to rough chop. Continue pulsing for about 30 seconds until the chicken is finely chopped. *If you turn "on" the food processor, your chicken will become a "paste" instead of very finely chopped. Don't do this.
- In a bowl, combine lemon juice, mayonnaise, salt, pepper and creole seasoning and blend well.
- Toss chicken into the bowl, combine a few times with a spatula and throw in finely chopped celery.
- Place the 1 egg, lemon juice, salt and optional dijon mustard in a blender or food processor. Pulse a few times until frothy and blended.
- The key to this step is being patient and slow. Tablespoon by tablespoon start to add the olive oil, while the blender or food processor is on. Keep pouring slowly. It should take 2 to 3 minutes. If you rush this it will not emulsify.
- Lay wrap on a flat surface. Spread extra mayo if desired. Add chicken salad on top and spread evenly. Fold in two of the four side of the wrap about ½ inch. (So fold top and bottom) Then take the other side and wrap it up tightly! Cut wraps in half or leave whole.

Yes, the egg is raw, and raw egg is perfectly safe to consume, so long as you trust the source of your eggs. Anything you buy from a grocery store should be set, and if you get them from the Farmer’s Market or grow your own, just make sure you wash the shell VERY WELL before using raw egg, as this is where most of the contaminate comes from. (The shell isn’t sterile, you crack the egg, the shell contacts the egg and leaves some salmonella behind, the egg is now unsafe)

I went on Saturday morning and I excitedly told the young girl about finding your blog. The owner was out at the farmers market. I got the chicken salad wrap….delish! I purchases the paleo wraps and can’t wait to make my own this week. I am new paleo….I’ve tried many ways of eating…from raw to lord knows what. I’m 56 in pretty good health but have a bad hip. I’m a Paleo college student. You seem to talk a lot about budget. I see you eating lots of good quality meats and high quality vegetables, going to the Farmer’s Market and Whole Foods. About how much do you spend monthly on food?
I’m looking at spending $300 or less on food/month but grass-fed beef at $7/lb is pretty steep so I end up eating lower-quality meat.

Hey Tessa! Good question. So after calculating from my credit card, I spend about $275 on average on food without really budgeting. I stick to eggs and chicken as my main form of protein and look for when grassfed beef is on sale. Even at $7 a pound I can get about 3 meals out of that, so it’s not too bad. I will probably be doing a post on this in the next few months when I get back to school and am keeping track of exactly how much I spend on what.

Hi Monica! I love your site! I’m 22 years old and also from Mandeville, LA! I’m looking into healthier eating ideas so I can help my parents and myself lose some unwanted pounds! They are very hard to motivate to eat healthier and I think the best way to help them would be to cook for them. (I’m in nursing school at LSU and living at home so I think this is the best time to help them with a much needed change)! I’m not a big fan of mayo but I was wondering if this Paleo version was healthier/tastier than regular store bought mayo? So glad you commented! I get so excited when I see other local people making healthy lifestyle changes. Making a change as a family is a great way to motivate each other. My dad was a major reason I went Paleo, and we keep each other on track in all aspects of health! About your question, this mayo is definitely tastier and healthier than store bought mayo. I absolutely despise regular mayo, and I love this recipe. If you aren’t a big fan of chicken salad, this might not be the first recipe to start; although the flavor is pretty mild. You can find more in the recipe index though. And yes about Vive! It’s honestly my favorite food place in Mandeville area. The lunch is delicious and they have a restaurant upstairs called Opal Basil. The food is divine!! Feel free to ask any more questions. Good luck in nursing school! 🙂

Hey Amanda, I’d love to try this as well. I’m not sure if they will freeze well, but I don’t see why not. I think freezing the chicken salad would be smarter, and taking that out on a Sunday and just packing those up for the week and storing in the fridge may be better. The wraps probably don’t freeze well. But for most of my once a month cooking, it always requires a bit of assembling the week of! Does that make sense?

I want to try these for my Dad whom works in a rock pit so there isn’t an “office kitchen” next to the excavator. Yes definitely! They are absolutely perfect for office lunch. You can use these wraps to wrap up other things as well. You could wrap turkey, ham, slices of chicken, vegetables, etc.!

I use them as is for my chicken salad wraps, but some people like them pressed in the skillet to heat/toast them!

Don’t heat the Paleo wraps more than 12 seconds. They are made of coconut meat and coconut oil. All they will do if over heated is pretty much melt. I know from experience! Good luck!

If you consume sunflower oil yes! I personally do not. If you want to substitute I would use avocado oil or macadamia nut oil.

I am sorry but I don’t know anything that will do the trick! You can always put the chicken salad in a lettuce wrap or on top of a salad.

Hey, great recipe and site!! FYI, The Paleo Kitchen cookbook has a mayo recipe that is SOOOO much easier…you take 3/4 cut oil of your choice, 1 egg, lemon juice(1 tsp I think), and 1 Tbsp Dijon mustard, place them in a tall, narrow container, and use an immersion blender! Start at the bottom and move the blender upward as the ingredients emulsify. I had quit making my own mayo because the other way was SO time consuming and mine never seemed to come out right, but this version is pretty fool-proof! I use grapeseed oil because the olive oil is a bit bitter for me.

I make my Mayo like Audry describes and it comes out perfect every time. I like Macnut oil because of the 1/1 ratio of Omega 3/6. Just the original one. They are not all alike. Often I mix my oils and use some Bulletproof XCT oil, avocado oil, olive oil, Macnut oil, etc.
Only buy eggs from local farmers. I need to come to Covington’s Farmers Market sometime.

I would use lettuce or try a grain free tortilla from Against All Grain’s cookbook/website. I don’t have another recipe on my blog, but you can wrap this in lettuce or put it on top of a salad.

I just found your blog. I will be checking back frequently in the future. I bought these wraps a long time ago and they are still sitting in my pantry. I make chicken salad almost weekly…I will have to try them in the wraps soon!!! Just a tip I am so thankful to have discovered. Paleo mayo becomes 30 secs in the making and SUPER EASY if you have an immersion blender! It was well worth my $15!! Just put all the ingredients you listed including the oil in a large mouth pint and a half mason jar put the blender to the bottom and blend! There is a video online somewhere. It is the original recipe I found and that blogger took a video of making it. A real time saver!!

Thanks for the great recipes!! I’m new to your site, but love everything about it! That being said, I was recently diagnosed with Endometriosis. Rather than take pills or have surgery, my midwife has agreed to let me try the Endo Diet, which is very similar to the Paleo Diet, except I can’t have red meats or eggs. Is there a healthy substitute I can use in place of the egg for the mayonnaise?

I ordered the wraps you linked to in your post–from Julian Bakery– and although they’re delicious, they don’t look anything like the ones in your photos. The wraps in your photos look white or at least light, but the ones I ordered are very dark brown, probably from the flax meal and ground Chia listed as ingredients. Are these the ones you used? The wrap you have pictured here is not the same as “paleo wrap online” you have link to. Can you tell me what brand of wrap you have the chicken salad wrapped in. It almost looks clear. The other one is made with ingredients that don’t work for me.
