Today I’ll be sharing a recipe called, Better Than Oatmeal! This Paleo Oatmeal recipe is perfect for when you want something sweet and filling for breakfast.
I am actually not a huge fan of “Paleo-ifying” everything. Paleo muffins, paleo pizza, paleo donuts, I’m not sure any of those are actually Paleo. I believe when you switch from a Standard American Diet to a Real Food Diet, your meals should emphasize real food, and not try to emulate your old favorites. But in the case of this recipe, the ingredients are all real food. Eggs, fruit, and nuts. And it’s not really faking anything! For more on this topic, I like Stupid Easy Paleo’s post called “Why Paleo Donuts Suck”. I’ll have to agree with her on that!

- 1 ripe banana
- 2 eggs
- 1-2 teaspoons vanilla
- Dash of cinnamon
- 1-2 Tablespoons crushed pecans
- Toppings: pecans, sliced almonds, fruit, butter (optional)
- Add banana, eggs, cinnamon, vanilla, and pecans to a medium bowl and mash together (the batter will be lumpy).
- Grease skillet with butter and turn on stove to medium heat.
- Add the enter mixture to the skillet.
- As the mixture cooks, continue to stir and mash.
- Once fully cooked, remove from heat and place in a bowl. Top with optional ingredients.

I agree with you about how stupid the whole Paleo baking craze is– you’re going to see so many more improvements eating berries and eggs instead of muffins, rather than just tweaking your favorite muffin recipe to be made with almond flour instead of white flour. Pretty sure cavemen weren’t whipping up pastries with “arrowroot powder” in their spare time

I would have to disagree with you on “paleo-fying” things, if you are just starting a new life style some of those foods are comfort foods, or go to foods, and sometimes when you don’t have them emotions can suffer. I have no problem with paleo-fying pizza, that is a way to get someone who isn’t as savvy to begin their journey in the kitchen, and to learn the types of oils, fats,vegetables, and meats that they should be putting into their bodies, and my paleo pizza crust is made out of cauliflower… and as for baking some people may just enjoy baking, and because the’ve made a life style change doesn’t mean they’re going to give that up, why not make healthy, paleo treats to bring to work rather than donuts, or processed and dye laden cup cakes, or making birthday cakes/cupcakes or having traditional treats during the holidays just things that are paleo approved and show other people who maybe are not paleo that things do taste yummy, and it’s not just vegetables and meat.

Ericka I totally understand where you are coming from. My main point is that many people try Paleo and end up Paleofying everything and then don’t get results. Personally I only make Paleo treats maybe once a month, but it really depends upon your goals. Of course Paleo treats are much healthier than regular treats!

I “discovered” this myself last week with a failed attempt at making paleo banana pancakes using my blender. It was too runny to make a good pancake, so I just “scrambled” the whole recipe in a hot skillet and then topped the results with fruit and nuts. It was all the “comfort food” you could hope for without the oats! I have blueberries in my fridge and they’re headed for your recipe tomorrow morning!

This was amazing! I just started Whole30 (day 6!) and am looking for interesting things to do at breakfast. I did this today (without the vanilla extract) and mashed my blueberries in a pan, too, to give them a different texture. So good!

I found this recipe on Pinterest ,pinned it and kind of forgot about it. After going through some of my boards and realizing I had a few to many bananas to eat I decided to make this today. So happy I did. It was so yummy. I can not wait to make it again. I also bought the book and look forward to reading it. I am so happy I came across the recipe.
