No need for tortilla wraps! Lettuce wraps are just as good. Here are my Paleo Mexican Lettuce Wraps.
Lettuce is a great alternative for bread, and it’s perfect for lunch. Lunch can be such a tricky meal for grain free eaters. Sandwiches and bread always seem to fit with the standard lunch. I personally like to stuff things in lettuce, roll it up, and put a toothpick in. Most are served cold anyways, and stay fresh in my lunch box!
Personally, I make these lettuce wraps with ground grass fed beef, but they’re good with ground turkey, grilled chicken, or any other meat. You can stuff any of your favorite veggies with the meat. I like bell peppers and onions the best! Top it with salsa, and you’re golden.
Now here’s something to contemplate. When you think about your favorite foods is it really the bread that you love? Or is it the stuff with the bread? At a gluten free conference I went to, someone brought that point up. What’s your favorite part of lasagna? Not just the plain noodles, it’s all the flavors that are around it and the veggies and meat. Bread or pasta or tortillas are usually just a binder or filler! They don’t have much taste. Do you agree?
- 1 lb grass fed ground beef
- 1 teaspoon sea salt
- 1 teaspoon ground pepper
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 2 Tablespoons cumin
- 1 red and 1 green bell pepper, cut into thin strips
- Romaine lettuce
- Brown the ground beef in a frying pan, using a spoon to break up the meat while cooking. When about halfway done (half pink/half brown), add the peppers and the seasoning. Cook, stirring occasionally until the peppers are soft and the meat is brown.
- To assemble the wrap, take a large lettuce leaf and add a couple of spoonfuls of ground beef and peppers. If you put too much on it you will not be able to roll the wrap. Spoon some salsa on the top. Start from one end of the lettuce and roll it up.
