All I can say about this recipe is wow. It is truly like no other Paleo Chicken Salad.  All I can say about this recipe is WOW! It is truly like no other Paleo Chicken Salad; it’s actually the best chicken salad I’ve ever had! Talk about a meal with a ton of fresh flavor! After making this recipe last night, I feel I must share it with everyone! This can be served in a bowl, in an avocado “cup”, lettuce wraps, or on grain-free bread if you’re into that! I wish I could take credit for this meal, but I found this recipe from one of my favorite bloggers, Heather, from Multiply Delicious.

Grass-Fed Paleo Hamburgers

Sometimes we don’t feel like cooking extravagant meals, and we just need a HAMBURGER. How about Grass-Fed Paleo Hamburgers for dinner?!

I get a lot of questions about what I actually eat. What can you even eat? What do you order at restaurants? It’s actually not that hard to find things to eat while following a Paleo lifestyle. Did you know that you can eat hamburgers? And they can be good for you?! Hamburgers have a bad reputation when it comes to health. People think saturated fat from juicy meat, carbs from the bread, and well, everything people like to pair with hamburgers (cough cough… french fries). People definitely have it right about the negative consequences of bread and fries, but let’s eat the meat. 

So why grass-fed? 

  • They have a better ratio of omega 3’s to omega 6’s; we want omega 3’s. They are anti-inflammatory!
  • Omega 3’s almost vanish in the feedlot. We want omega 3’s, because they help prevent cancer. 
  • It is good for the animals and supports sustainable farmers. 
  • Cows are meant to eat grass, not grains! Cows eating grass are healthier, which makes them safer for you to eat! 
  • Cows eating grass aren’t sick, so they don’t need as many antibiotics. This is good, because you aren’t getting their antibiotics (but you will if you eat conventional meat!).

Ingredients
  1. 1 1/2 lbs grass-fed ground beef
  2. 2 Tablespoons coconut oil
  3. Salt & pepper
Instructions
  1. Divide the meat into 4 equal portions. Make a depression in the center of the patty with your thumb.
  2. Season with salt & pepper.
  3. Add oil to cast iron skillet, and heat until the oil is shimmering.
  4. Cook patties for 3-4 minutes on each side, or until golden brown.
  5. Top with bacon & sautéed onions.

Tony Z’s Wild Turkey Breast Recipe

Do you find that turkey is a dry and plain meat? I certainly have had some plain turkey in my lifetime. I always reach for the ham over turkey at Thanksgiving. Until I found this Wild Turkey Breast recipe I didn’t realize how incredible turkey can taste!

We got these turkey breasts from one of my dad’s hunting friends, Tony Z. Tony actually killed the turkeys this season in South Carolina. There’s nothing more Paleo than wild game. We based our wild turkey breast recipe off of one from the NWTF, National Wild Turkey Federation. Dad ate it for dinner, and I ate it for lunch the next day. It’s GREAT leftover, and we loved it so much we took out another turkey breast to make it again a few days later! Serve this dish with Faux-Tatoes on the side.

Don’t forget the importance of wild game meats in your diet. Here are some of the benefits:

  • High in EPA, which reduces the risk of heart disease
  • Rich in vitamins and minerals
  • Obviously free of antibiotics & hormones found in conventional meat
  • It is what our healthy ancestors would’ve consumed

Ingredients
  1. 12 oz. bacon, diced into 1/4-inch pieces
  2. Cajun poultry seasoning, as needed
  3. 4 tablespoons pasture butter
  4. 1 1/2 cups chopped onion
  5. 1 (2-pound) boneless turkey breast, cut into 1-inch chunks
  6. 4 tablespoons coconut oil
  7. 1 tablespoon coconut aminos (optional)
Instructions
  1. In a large cast iron skillet add bacon and top with Cajun seasoning. Fry until crisp.
  2. Drain, discard grease and set aside.
  3. Add 1 tablespoon of butter and chopped onion to the skillet.
  4. Saute onion until tender. Then remove onion and set aside.
  5. In a bowl, combine the turkey breast, 2 tablespoons coconut oil, coconut aminos and seasoning.
  6. In the skillet, heat remaining butter and coconut oil until sizzling.
  7. Add turkey, cooked bacon, and onion.
  8. Cook on medium-high until turkey is brown and tender (around 15 minutes).
Notes
  1. Be careful buying bacon. Look for antibiotic, hormone, & nitrate free. Try to find bacon that was not cured in sugar, if possible. Bacon is something you will want to spend a little bit more money to get good quality.
