Brussel Sprout Caesar Salad

Time to mix it up. This is a Brussel Sprout Caesar Salad. And it’s amazing!!

For some reason I don’t like how that sounds. But either way, it’s a new beginning. I love new beginnings. Except for me, I like to think of every day as a new beginning. Because let’s face it. Most days we need a fresh start.
So yeah, I’m starting a YouTube channel! WOOHOO. It feels right. As for the blog, I’ll let it evolve. Eventually, you will show up to the blog see “Recipes, skin care, Other health topics…”.


But what will always be consistent is food. I don’t think that aspect of my blog will ever change. I always want to provide delicious, beautiful recipes. So here’s one recent one. This is my Brussel Sprout Caesar Salad.
The only problem I came to with this recipe is the dressing. I do not regularly make homemade dressings. Simple ones, sure. But who has an extra 20 minutes to make dressings every single week. So I bought a random Caesar from Whole Foods. I’ll let you know when I find a brand I like. But here’s my homemade Caesar recipe if you want to try it out. The best part about this recipe is how easy it is to put together on a busy week. It took me no time!

This Brussel Sprout Caesar Salad takes less than 10 minutes to assemble. The perfect lunch for a busy person!
I brought this for lunch this week. I have been on my Pediatric rotation, which has been GREAT. My peds residents are the nicest people ever, and I love working with the kids. This year is a year where to do residency, looking good on paper, and feeling confident in the field you choose. AH! I am trying my best to stay healthy, by working out daily and getting good sleep. And staying calm. Very very calm.

Shaved Brussel Sprout Caesar Salad

Calories 380 kcal

Ingredients
  

  • 1 pound brussel sprouts
  • 8 eggs hardboiled and sliced
  • 1 cup almonds sliced
  • Parmesan cheese shaved
  • Caesar dressing as needed
  • Cracked black pepper

Instructions
 

  • Rinse brussel sprouts and cut stems off.
  • Place brussels in a food processor and pulse until shaved. 10-20 seconds.
  • Place brussels, eggs, almonds, cheese and dressing in a large bowl. Toss and top with cracked black pepper.

Notes

If preparing ahead, I prepare ingredients on a Sunday then I assemble each bowl in the morning. Takes 3 minutes!
