Mango Avocado Salad

This Mango Avocado Salad is the easiest way to cool down a hot summer day. And trust me, in Louisiana we will take any help we can get to cool down! 

This Mango Avocado Salad is the perfect light appetizer or side dish! Sure to cool down any hot day. This weekend I went to a Father’s Day gathering at my Aunt and Uncle’s where my uncle grilled burgers and chicken, and we all feasted and caught up on life. Typical for our family, but never the less a great day. My aunt made this Mango Avocado Salad which she said she’d found in the newspaper. It was a great combo of flavors and I really liked the presentation, so I went home and made it the next day. There’s something amazing about a perfectly ripe avocado and a perfectly ripe mango. They just may be my two favorite items in the produce section! And combined, they are even better.

This Mango Avocado Salad is the perfect light appetizer or side dish! Sure to cool down any hot day.If you want an update on my life, well, in less than 6 weeks I will be starting medical school. It’s somewhat daunting, but exciting too. I think once I’m in school I will make sure not to frighten everyone by telling them “Get ready. You will not have a life”. I realize school will be my life, and I’m pretty thrilled to be given the opportunity! I’m hoping to be able to keep my blog going, so have no fear, recipes will still be headed your way each week!

Mango Avocado Salad

Ingredients
  

  • 2 Mangoes sliced into thin strips
  • 2 Avocados cubed
  • 1/4 red onion diced
  • 1 Tablespoon white balsamic vinegar
  • 1 Tablespoon olive oil
  • Pinch of salt

Instructions
 

  • Combine all ingredients and serve freshly cut and cold.
