I haven’t been this excited to share a recipe in well… maybe forever. These Crispy Chicken Paleo Tacos are so incredibly delicious and perfectly Paleo!
Since my last recipe, I’ve tested 2 or 3 new recipes and they just weren’t “share-worthy”. Then I ate this and I can’t get enough! So basically these chicken tacos require cooking the chicken in the crockpot with Satsuma juice, lime juice, and tons of seasoning for 6-8 hours. After that throw it in the oven on broil and you will achieve the “crispy” part of the Crispy Chicken!
I also left the fat on my chicken for extra flavors, and you should do that too. The orange juice can be substituted for satsuma juice, but I was trying to incorporate local ingredients. And these local satsumas are so juicy and sweet that I think I’m going to have to go back for some more.
So you can stop there and use that chicken for a taco salad, main course, quesadilla, or you can make tacos like I did! For my tacos I used a Paleo tortilla (BELOW!) and stuffed it with my favorite toppings. The toppings I used were avocado, more satsumas, local napa cabbage, the cooked chicken, and some freshly chopped cilantro. I didn’t use cheese because I didn’t think it needed it, but you may want to use cheese.
For the local napa cabbage, I sliced it into strips, put it in a big bowl and added olive oil, a little lime juice, a tablespoon of apple cider, and salt and pepper. This is just one of my favorite toppings for tacos that I learned from working in the kitchen this summer. Okay so enough taco talk, let’s get to eating! : )
