OMG, this Paleo BBQ Chicken is only made with 3 ingredients, has a 5 minute prep time, and comes out perfectly juicy! The best part is you can enjoy the BBQ taste without a BBQ grill.
I’m going to start by saying I spent less than $50 at Whole Foods this week. A total record for me, so I actually told the cashier that I was pretty excited about it. They had chicken thighs for $2.50 a pound and chicken legs for $1.99 a pound. Of course I had to start planning what recipe I could make to share with you.
I wanted something super simple, quick to make, and great leftover. All I really had in my fridge was this Tessemae’s BBQ sauce. When you think BBQ sauce you usually think it’s for dipping right? But then you get the issue of warm baked chicken with cold BBQ sauce. Which can be just blah sometimes. So I said, let’s paint this chicken with sauce, throw it in the oven, and call it a day. I was pleasantly surprised how amazing it came out. The chicken was crispy on the outside, but juicy in the inside. And the Tessemae’s sauce is so flavorful that it’s perfect as is. Oh yes, and 100 percent Paleo!
To reheat it for leftovers, you can put the oven on broil and place the chicken in it until warm. I plan to eat it with broccoli, or cauliflower mash! This is a perfect dish for the college gal living on a budget, with little time.
Note that I used Tessemae’s BBQ sauce (get it here!) because it’s completely Paleo, but feel free to use another type if you like! I think Stubb’s BBQ sauce is pretty yum too, just not totally Paleo!

- Preheat the oven to 350 degrees.
- In a large bowl mix the chicken, bbq sauce, and salt. Then place in a baking dish.
