I was pleasantly surprised at how delicious this sweet potato bread recipe came out! It’s a great way to prep your food ahead, for the next week (if you don’t eat at all at once, like me…). Sweet potatoes have become top 10 favorite foods on my list, and if you don’t agree you must try this recipe! I personally like it served hot, with some melted grass-fed butter on it.
Many people ask me my opinion on carbs, and truthfully I believe it depends on the person. When I started adding sweet potatoes to my grocery list, my workouts were more efficient, and I recovered quicker. Here’s a great article on Females, Carbs, and Hormones. Going too low carb may not be the answer for you! It’s all about experimenting with yourself and finding what works best for you.
This recipe is easy to make and very filling. If you are going to use grain-free flours, coconut flour is the best out there (as far as nutrition is concerned). It is a dense flour, but in this recipe you don’t have to use much.

- 1.5 cup cooked sweet potato
- ¼ cup coconut flour
- 1 teaspoon baking soda
- 2 eggs
- ¼ cup melted coconut oil
- ½ Tablespoon cinnamon
- Preheat oven to 350 degrees.
- Mix the coconut flour, baking soda, and sweet potato in a mixing bowl.
- Add the eggs and coconut oil, and mix well.
- Top with cinnamon.
- Put mixture into a loaf pan and bake for 30 minutes or until the middle is set.
- I boiled my sweet potatoes before, and removed the skin.

does this actually come out like bread?? it just looks like a rectangular shaped baked sweet potato haha

No it is not “bready”. It is more like a baked sweet potato but thicker! Try it out and you’ll see : )

I’m wondering if this has a good texture for a sandwich, such as almond butter with banana slices? I just kind of long for a normal comfort food type sandwich once in a while. I sometimes miss the “fluffanannernutter” sandwiches I used to make.

Unfortunately no, this isn’t going to satisfy that regular bread texture! It’s more of a banana bread texture, which is a lot softer.

I’m curious about the density / texture of the final product. Is it going to hold together well or fall apart easily? I’m not fussy about the texture of my bread so long as I can layer some lunchmeat on it. I’ll probably make it either way since I love sweet potatoes, just trying to plan it as part of a meal.

Honestly it’s not going to hold up like regular bread. I mean it may hold up enough to put a few things on it but I think it’s too sweet for lunchmeats. I have only made this recipe once and when I did I put butter on it! 🙂

Help! I tried making this today, and it fell apart on me. I followed the recipe to the letter, and after 30 minutes a toothpick came out nice and clean. I then took the bread pan out of the oven, went to turn it over onto a cooling rack, and the top half just sloughed off. :\. I guess I didn’t cook it long enough, but how am I supposed to know when it’s set if the toothpick method doesn’t work?

I made this bread and it came out wonderful. I added rainsens and walnuts as well. I would say the consistency of the bread will come out like a cheesecake. Its very moist and not like a bread at all. It was delicious! I am now going to try out this recipe using bananas instead of the sweet potato and see how it comes out.
