Paleo Tomato Basil Soup

Do you need a hot soup recipe to help you through this cold winter? My Paleo Tomato Basil Soup is just what you’re looking for.

Looking for a dairy free, grain free soup? Try this Paleo Tomato Basil Soup.

I was inspired to make my own Tomato Basil Soup after trying a vegan, Paleo one at one of my favorite spots in Baton Rouge. Since many soups are full of heavy cream or milk, which are not technically Paleo, I had to substitute with coconut milk to get that creamy texture.

I don’t know about the weather where you live, but here in Louisiana it’s COLD, and we are not used to it. SO not used to it that they cancelled class 3 times in the past week because of the ice. To warm up, I’ve made Paleo Chili and Tomato Basil Soup. It’s perfect because I can cook once and eat twice, three times, or even four!

Looking for a dairy free, grain free soup? Try this Paleo Tomato Basil Soup.

Based on La Madeleine’s recipe:

– 4 cans whole tomatoes, crushed (I use 2 large 28 oz. cans instead of 4 smaller ones) Note: check for ones without added sugar
– 4 cups tomato juice and part vegetable broth or chicken broth (I use 2 cups tomato juice and 2 cups chicken broth)
– 12 or 14 fresh basil leaves
– 1 cup coconut milk
– 1/4 lb. butter
– Salt and cracked black pepper to taste

Combine tomatoes, juice and/or broth in stockpot. Simmer 30 minutes. Purée, along with basil leaves, in small batches in a food processor, blender or better yet, a hand-held immersion blender right in the pot. Return to pot and add coconut milk and butter while stirring over low heat.

How to Study for Step 1

I must have googled “How to study for Step 1” hundreds of times during my second year of medical school. The test was daunting to me, and all I wanted was to do well enough to have a chance at a competitive specialty, like Dermatology. My goal was to get above a 250 on Step…

I’ll admit I’m guilty of store bought broths, but preferably I use a homemade broth! Just google paleo homemade broth. I know mine by heart, I’ll post it eventually. 🙂

Has anyone tried using dried Basil in place of fresh and if so how much dried to replace the 12 to 14 fresh.
Yes, I would love using fresh, but live in the Middle East and can not locate any fresh at this time.
    Thanks for any help.

There’s a 1/3 rule for dried to fresh. So I would use 4-5 leaves of dried basil!

Well I made this soup using dried Basil, 2 teaspoons, did not really taste the basil, will try using 3 teaspoons dried Basil next time. The soup was very good, even my husband who does not really care for Tomato soup, enjoyed this soup.

Can the butter be substituted by ghee or something else, being butter isn’t paleo-friendly?

It’s debatable if butter is “Paleo”. Some very strict Paleo eaters won’t consume ghee or butter. I haven’t made this soup with ghee but it should work.

This soup is excellent! My husband and I make it once a week. Thanks for the great comfort food! The only thing we changed was we added a can of full fat coconut milk to make it a bit creamy.

Hey Mallory! I personally love Magpie, Salad Shop, or Whole Foods for a lunch stop. If I’m going for dinner I usually can find something 80% clean anywhere, but I have been meaning to try a place called “Table” that is supposed to be awesome and farm-to-table style.

[…] 3. Paleo Tomato Basil Soup Tomato soup is one of the more classic soups you can make, and many consider it comfort food. The only problem is that traditional tomato soup is not only made with conventional tomatoes, it usually involves using milk, cream or some other form of dairy to give it its taste and texture.
