When fall comes around, my favorite thing is to make festive treats! My mom and I have always loved making desserts shaped into ghosts, pumpkins, etc. Last weekend we decided to take a healthy carb, sweet potatoes, and cut them into pumpkins! Sweet Potato Pumpkins!
This is a chance to let your kids get creative and have a healthy Halloween treat! Feel free to add cinnamon and butter for a really delicious side dish.
Why should you be eating more sweet potatoes? They are a wonderful source of vitamin A. They are full of antioxidants, have an anti-inflammatory effect, and are a great complex carb. If you are very active, it’s a great idea to add some sweet potatoes to your diet to help you power through those workouts!
Why add cinnamon to your sweet potato? Some believe cinnamon paired with a starch may actually lower the glycemic effect from the carb. This means it will help stabilize blood sugar. And butter, or coconut oil? It’s a fact that fat actually helps you absorb the full beta-carotene benefits from sweet potatoes.
So go buy some sweet potatoes! They’re in season in November and December. You and your kids will love making these cute pumpkins!
Optional- butter and cinnamon
Preheat oven to 400.
Cut sweet potatoes in ½ inch thick circles and place on a cookie sheet.
Bake for 30-35 minutes. Test with a fork, to see if they are soft.
Cut out Jack-O-Lantern faces with a knife.
Optional- top with cinnamon and butter.
