Looking for a light Caesar dressing? Instead of buying a store bought dressing full of trans-fats and unknown ingredients, make your own Paleo Caesar Dressing! It only takes a few minutes to make.
My favorite kinds of Caesar dressings are the light and flavorful ones. Many cream-based dressings are extremely fattening and usually not the best flavor. My favorite restaurant from my hometown has an amazing Caesar salad. After getting it to-go so many times, I decided to create my own, which is much cheaper.
This dressing is incredibly easy to make. Most homemade dressings are no hassle to make, and you will save money. Unlike most Caesar dressings, this dressing is not thick or creamy. It drizzles on nicely, and you can use it with almost any salad.
For this salad, I like to use romaine lettuce and top it with bacon and goat cheese. If you are avoiding all dairy, omit the goat cheese. If you are lactose intolerant, and you didn’t know this already, goat milk does not contain lactose. This dressing is completely dairy-free but does contain a raw egg, which makes the shelf life shorter.
After making this dressing, I’ll eat Caesar salad every night until it’s gone. It is simply that good. If you haven’t made homemade dressing, try it out! You won’t ever buy processed dressing again.


- 3 large garlic cloves, peeled
- 2-4 anchovy fillets
- 1 large egg yolk
- ½ cup EVOO
- 1 lemon, juiced
- 1 teaspoon coconut aminos
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Pulse garlic and anchovies in a food processor.
- Add the egg yolk to the mixture and continue pulsing.
- Drizzle in the olive oil and lemon juice slowly.
- Add the coconut aminos, mustard, and salt and pepper and combine.
- Store in a container in the fridge up to 5 days.

Ive heard if you are allergic to eggs, there is a way to simulate with soaked chia seeds.
I made one like this without the coconut aminos, and it says to toss in 2 days. Do the aminos help to preserve it?

Interesting, I’ve never heard that. And I don’t think the aminos help preserve it; I’m not sure why they tell you to throw it out after two days. They may say that to be safe, but you should judge it yourself. 3-5 days should be fine.
