Does that even make sense? Paleo Dark Chocolate Bark. The cavemen definitely didn’t have dark chocolate bark, but if it was available they would definitely have eaten it. This recipe is Paleo-“ish” because of the awesome health benefits of dark chocolate, and it’s topped with sea salt and macadamia nuts. I actually probably don’t even need to write out the recipe for this one, it’s more about sharing this delicious dessert idea. Basically you melt a dark chocolate of your choice, lay it on parchment paper, and top it with nuts and sea salt. This stuff is like crack, so be careful. Or maybe I just thought it was like crack because I managed to eat most of the bark in the house while my sister and dad had only a few pieces.. They were definitely mad at me. So that was just more reason to make another batch. Speaking of Holiday season. I’m starting something new for my blog posts. We’ll see how long I like this and want it to last. I don’t want to write just about the recipe anymore, so instead I’ll share 1. A Quote 2. A personal picture/meal picture 3. Something I accomplished in this past week It’s just something fun to do and another way for me to share with you a more personal side of things. And if you don’t care to read it the recipe will always be at the bottom of each post!
So for this week.
1. Quote: “Small changes add up to huge results.” Since I’ve been reading the “Power of Habit” book, which you can get it on Amazon (affiliate link), I’ve learned a lot about habits and keys to success. They talk about this concept of keystone habits, which is one habit that has the power to start a chain reaction, of transforming other habits. It’s a pretty cool concept and it makes a lot of sense. To me, the small change of finishing every small task I do has really helped me mentally. Just completing small tasks has in turn helped me complete large tasks. For instance, finishing a 3o minute workout to completion has helped me complete my scheduled 6 hour study days.
2. Personal: This is my meal from Christmas Lunch. For my celebration with my dad’s family, we made all Paleo dishes. Pictured is my favorite Cauliflower Casserole, some oven roasted sweet potatoes, turkey, brussel sprouts, and a salad similar to my spinach salad. And to those who comment saying my portions are too small, I’ will have you know I had seconds and leftovers for dinner 🙂
3. Something I accomplished: I met my study goals this week and got to spend a lot of quality time with my family, especially my wonderful sister (who also blogs). Okay now I’m gonna go sneak some more of this bark from the fridge and enjoy the last of this Christmas season. New Years is straight ahead and I can’t wait!


- 2 85% dark chocolate bars (I use Lindt)
- ⅔ cup of macadamia nuts, chopped
- Sea salt, to taste
- Melt the chocolate in 30 second increments on power level 5, stirring every 30 seconds.
- Once melted, lay the chocolate on parchment paper. Top with nuts and sea salt.
- Place in the fridge to cool (for a few hours). Break apart with hands and store in fridge.
