Paleo Cobb Salad

Need another Paleo lunch idea? I’ve recently been nommin’ on lots of salads. So yesterday I decided to create a Paleo Cobb Salad!

Paleo Cobb Salad- great for lunch or dinner!

I’m not big on tomatoes, but when tomatoes are mixed with avocado, olive oil, and hardboiled eggs it really changes the flavor. And bacon, of course anything with bacon makes it good!

Recently my followers have been asking for more info on my eating habits and workout schedule. This week I was home for Mardi Gras break and going home means Momma’s cooking. I did make it over to Whole Foods yesterday to buy some essentials- kombucha, tons of broccoli (5 bags), eggs, organic wine, strawberries, and sweet potatoes. I have plenty of meat in the freezer that I take out as needed, so there was no need to buy any!

Although most weeks I feel it necessary to prep all my food ahead of time, this week I feel like cooking and I want to listen to my body about how much to eat, when, and what. Some days I want a sweet potato and butter for breakfast. My roommates say I’m strange, but I love having random leftovers in the morning!

As far as my workouts went, you can click here to see my workouts for this past week (and here’s last week’s). I’ve decided to go back to ballet, so crossfit and ballet will be my main training! Another bit of good news, I found a gym about 5 minutes from my house with a great atmosphere. I’m excited to start riding my bike there and taking advantage of their Zumba classes. Now, finally, here’s the recipe! 

Paleo Cobb Salad

Ingredients
  1. 1/2-1 grilled chicken breast
  2. 2 slices of bacon
  3. 1/2 avocado, cubed
  4. 1 hard boiled egg
  5. 1/2 tomato
  6. 1/4 red onion, chopped
  7. Dressing
  8. 2 Tablespoons olive oil
  9. 1/2 Tablespoon balsamic vinegar
  10. 1/2 lemon, juiced
  11. Salt and pepper to taste
Instructions
  1. Prepare chicken, bacon, and egg ahead of time (see notes).
  2. Assemble salad, top with dressing!
How to prepare
  1. Cook chicken in oven on 400 for 30 minutes.
  2. Cook bacon in oven on 400 for 15-18 minutes.
  3. Boil egg for 10 minutes on the stove.
