The key to amazing Paleo recipes is to not be afraid to think outside the box. There’s no reason you have to eat grilled chicken and sweet potatoes every night, although I do that far too often. Because I like it. In this recipe I used local raised pork, local goat cheese (chèvre), organic spinach, and tomatoes from our family garden! It’s so exciting to go outside and pick a few tomatoes.
