Mmmm. My two favorite things. Hot soup and sweet potatoes!

This has officially been the longest I’ve gone without a blog post, and hopefully it will never happen again! The past two weeks have been school, school, school, and… ugly food. Sometimes Paleo food is habitual and I’m not kidding when I say I ate that Cauliflower Soup 5 days in a row. But Christmas came early for me. Last week I received a BlendTec in the mail! And I feel like a little kid with her new favorite toy. Like how I felt when I’d get my new Barbie house and I didn’t want to leave the house just to play with it….
Paleo Cauliflower Soup with Bacon and Chives
If you’ve ever been to Louisiana or maybe another Southern state, you know that the cold here is a different kind of cold. It’s not like Colorado where the air is dry and brisk. When it gets cold here, the air here is thick, wet and FREEZING. It feels like your insides are freezing, and there’s no other cure but soup and hot beverages. Which is why I made this delicious Paleo Cauliflower Soup last week.
My eating habits are quite… repetitive. Last week I ate this soup probably 5 out of 7 days, and each day it was just as delicious. Cauliflower soup may sound gross to you, but it really resembles a baked potato soup! Speaking of baked potatoes, I’ve been attempting to add back in some white potatoes in my life. Testimonial Tuesday: Paleo Blogger Plaid and Paleo
I’m still learning what being healthy truly means. I’ve always been thin and fairly active. In high school, I pretty much ate what I wanted because I was working out three hours a day, seven days a week. Sometimes I would worry about my weight and order a salad doused in blue cheese dressing. I had no clue what eating healthy meant, and I wouldn’t learn for a very long time.
In college, I tried to eat “healthy,” but pizza sounds better than salad. After my sophomore year, I decided to go on a low fat diet and work out 4 times a week. I counted every calorie and fat gram. I didn’t eat over 25 grams of fat a day, most of the time even less. I ate so much processed foods. The weight wasn’t coming off so I stepped it up and cut out all red meat and pork. Finally 13 pounds came off in a two week period. I was tinier than I had been in high school. I thought I looked good, but now I realize I was too thin and hit an unmanageable weight. I went back to college and slowly put the weight back on. I didn’t give real thought to my weight or eating healthy for four more years.
