Whole30 Chicken with Bacon and Rice

  • 5 slices bacon chopped
  • 1 lb chicken cubed
  • 3 cups riced cauliflower
  • 3 cups spinach
  • 3 green onions chopped
  • 1/2 tsp garlic salt
  • 1/2 tsp onion powder
  • 1/2 lemon juiced
  • Salt and pepper to taste


  • In a large cast iron skillet (or other skillet), cook the bacon on low to medium heat. When the bacon is almost cooked, add the chicken and cook it in the bacon grease on medium heat, about 4 minutes on each side.
  • Add the cauliflower, spinach, green onion, garlic salt, onion powder, lemon, salt and pepper, and cook until the spinach is soft and all ingredients are hot, stirring continuously.
  • Serve hot! This recipe is great as leftovers too!
