Shaved Brussel Sprout Caesar Salad

brussel sprouts
8
eggs
hardboiled and sliced
1
cup
almonds
sliced
Parmesan cheese
shaved
Caesar dressing
as needed
Cracked black pepper
Instructions
Rinse brussel sprouts and cut stems off.
Place brussels in a food processor and pulse until shaved. 10-20 seconds.
Place brussels, eggs, almonds, cheese and dressing in a large bowl. Toss and top with cracked black pepper.
Notes
If preparing ahead, I prepare ingredients on a Sunday then I assemble each bowl in the morning. Takes 3 minutes!
